Fudge... 3 cups sugar 1Tbs butter 1 cup milk 1 tsp vanilla 5 Tbs cocoa Put sugar, milk and cocoa into heavy sauce pan; stir and boil until it makes soft balls when tested in cold water; take from fire, add butter and vanilla, cool and stir until creamy. Pour on buttered platter and cut into squares..
Caramel Fudge..
In a heavy pan or skillet lightly brown 1 cup sugar. Slowly add cream, remaining sugar, butter, syrup and salt. Cook to soft ball stage or 235-degrees on candy thermometer. Remove from heat; beat until thick. Pour in buttered platter.
