Cake Frosting

 

Creamy Caramel Frosting...

2 cups brown sugar
1/2 cup butter
1/2 cup cream 
1 tsp vanilla

 Boil brown sugar, butter and cream to a soft ball stage (238º). Remove from heat and add vanilla. Beat until frosting is right consistency to spread. Top with nuts.

 

Boiled Frosting...
2 egg whites
3/4 cup sugar
1/4 cup corn syrup
pinch of salt
Place all in top of double boiler. Use electric beater. Beat 5-6 minutes over boiling water or until holdss up peaks. Add 1 tsp vanilla. Cool. Frost cake.
