Curried Stuffed Eggs...

4 hard cooked eggs, cut lengthwise and remove yolks

3 Tbs mayonnaise

1 tsp curry powder,     1 tsp minced parsley,     1/2 tsp prepared mustard

Set aside egg white shells. Mash yolks and combine with mayonnaise and spices. Spoon mixture into egg white shells. Garnish with paprika..

Potato Puffs..

1/4 cup onion, chopped,     1 1/2 Tbs chopped parsley,     1 egg

2 cups leftover mashed potatoes

1 to 2 cups fine cracker meal

salt and pepper to taste

Grind both onion and parsley fine. Mix ground onion, parsley and egg together in a large bowl. Add potatoes and salt and pepper. Gradually mix in cracker meal until the consistency is firm and the potatoes do not stick to your fingers. Shape into balls (about the size of a golf nall) and flatten so they are still about 1/2" inch thick. Then deep fry or pan fry until golden brown. Makes 4 or 5 servings (2 patties each)..
